Their prized tiger pufferfish comes from the Bungo Channel and nearby Kyushu waters—wild, not farmed. The fish is rested overnight in-house to deepen flavor before becoming silky sashimi, crisp fried bites, and a comforting rice porridge to finish. The sashimi is cut slightly thicker than usual, giving it a satisfying chew and a clean sweetness that blooms as you eat.
